I went ahead and called my tech at Thule (the owners of Sportrack), and she confirmed that your 27-inch barspread won't be a problem with the Sportrack Vista # SR7018, but it is possible that using a different bar spread than the recommended dimensions listed on our product page can void the warranty if damage occurs.
As far as the u-bolts fitting your 3-1/2 inch wide crossbars, you are good to go! The brackets are 4 inches wide on the u-bolt mounts.
